3 gr per 200 cc. of water at a temperature of 85°C. Leave in infusion for 3 minutes

Half-oxidized tea (Japan)

Japanese Oolongs are a rare specialty (mostly produced in China and Taiwan), reserved for tea lovers looking for something unique. In Kagoshima prefecture, near the active volcano Sakurajima, this extremely rare tea is made, produced from the “Benifuki” cultivar and the result of the crossing of two very different cultivars: Benihomare, an Assamese variety from India and Ceylon, and MakuraCd86, a sinensis variety most popular in China and Japan, known for its vibrant, fruity aroma, and rich flavour profile. An artisanal Oolong modeled on the Paochong of Taiwan and Fujian, with modest oxidation (8-12%). The curled leaves, harvested by hand, are subjected to a light toasting which maintains the initial floral characteristics. An absolute delight for the palate. Also to be prepared with repeated short infusions (the oriental method).

It goes well with seafood and grilled meats, white chocolate and fruit (melon, strawberries, mango)
