Yellow tea (China)
Rare yellow tea, masterfully handcrafted into long, twisted leaves, with golden, downy tips. Soft, with a fragrance of flowers and fruit, enhanced by a sugary sweetness. Yellow tea is one of six categories of tea in China, mainly produced in Hunan, Anhui, Zhejiang and Sichuan. Slightly fermented, the processing is similar to that of green tea with an extra step, the "sealing of the yellow": the tea master wraps and seals the still warm and moist leaves after the heat fixation phase in the paper, causing a "microfermentation" (between 10-20%) and creating a tea characterized by a soft sweetness. Compared to green tea, yellow tea has less astringency and less vegetal odor, as well as a sweeter and softer sensation. It can also be prepared with multiple infusions, oriental style.
It goes well with oysters, shrimp, salmon sashimi, pastries or desserts with walnuts and hazelnuts
