Green tea (China)
This magnificent tea is known as Anji Baicha (Baicha = white tea) because of the very light green colour of the buds and leaves of the cultivar from which it is harvested, Bai Ye Yi Hao, but it is in fact a green tea. It is harvested only in early spring, before Qing Ming, when the plant is rich in the L-Theanine amino acid, responsible for the lingering sweetness of this tea in the cup. The freshly picked bud and two leaves of the same length are withered indoors for two hours, submitted to the stabilisation process (Sha Qing) for a few minutes and then dried in the ovens. The whole process takes place in one day, non-stop. Traditionally, several infusions are repeated on the same leaves to appreciate the floral, slightly citrus and hazelnut notes that gradually emerge.
