Ginger & Lemon Chicken Bites

Delicious, fragrant, super fast and light: this is our holiday recipe. Perfect for a festivity dinner with friends.

Ingredients for 4 servings :

  • 3 chicken breasts, cutted in bites
  • salt
  • pepper (pinch)
  • extra virgin olive oil
  • 3 garlic cloves, finely chopped
  • 2 teaspoons of grated fresh ginger
  • ½ a lemon juice
  • 2 tablespoons of Ginger & Lemon herbal tea or 2 tea bags
  • ¾ cup of water
  • Peel of 1 lemon, grated
  • 1 full tablespoons of honey
  • 1 tablespoon of soy sauce
  • Cornstarch (optional)
  • parsley to granish ( optional)

    Make the marinade with the ginger & lemon herbal tea, infused for 5-7 minutes in 120 cc of boiling water, filtered and cooled, the lemon juice, soy, salt, pepper, fresh ginger, honey and garlic.
    Let the chicken bites marinate in the fridge in a well sealed container for some hours.
    In a pan or a skillet, heat the oil and cook at medium-high heatthe marinated chicken bites, stirring often and tossing while cooking with the leftover marinade. Use if needed at the very end the cornstarch to thicken the sauce. Garnish with the grated lemon zest and serve.
