Sencha Tea Scented Fish

Ingredients (serves 4):
600 g of seabream fillets
2 cardamom pods
500 g of cooked edamame (alternatively green beans, etc.)
Salt (Maldon if possible)
10 g of Sencha green tea - Le Grandi Origini
Evo oil

Infuse green tea in the boiling water and meanwhile prepare in the mortar a mix of salt and cardamom, removing the peel.
Rub the seabream fillets with the salt and cardamom mix and steam with the boiling green tea for about 5 minutes.

Serve the sea bream with edamame or green beans sprinkled with salt, oil, pepper and basil.
Decorate with toasted almond flakes.
