Chinese White Tea
Comes from an ancient wild variety of Camellia Assamica with large and velvety buds. Harvested by hand, the leaves and buds are dried up in ancient way on mats made of bamboo. This is a lightly oxidized tea, of unique characteristics. Yue Guang Bai is the Chinese name.
Because of the extreme delicacy, you can pair only to very delicate dishes: soft cheeses, milky desserts.
